Pastry Week
Week 6 on the Great British Bake Off brings us pastry week. We thought we would make lovely pesto goats cheese filo parcels, a delicious combination of crisp pastry, smooth goats cheese and a touch of pesto. These are easy to make and taste delicious either as a snack or to serve as a dinner party appetiser.
PESTO GOATS CHEESE FILO PASTRY PARCELS
Ingredients:
- 8 sheets filo pastry
- 4 tbsp olive oil
- 110g goats cheese
- 4 tbsp pesto
Method:
- Preheat oven to 190°C.
- Take one sheet of pastry and cut it into 6 square pieces. Brush 3 of them lightly with oil and put the other 3 on top at an angle. Brush them again with oil and leave to one side. Repeat with the remaining sheets of pastry.
- Divide the piece of cheese into 12. Put a piece of cheese in the middle of each pastry stack. Put 1tsp of pesto on top of each one, then carefully scrunch the pastry together to form a bundle. Brush lightly with oil on the outside to help it hold together then transfer to a baking sheet.
- Bake the pastry parcels in the oven for approx 10 minutes until golden brown.
- Serve warm.
